Why it works: Cabbage and pepper are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,081 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Boiled Cabbage
Ingredients
Directions
Prepare
Wash the cabbage in plenty of salted cold water and trim away the woody part of the stalk.
In a large pot, bring 5 to 6 quarts of salted water to a boil.
Boil and drain
Add the cabbage to the boiling water and keep it boiling steadily for 10 minutes.
Press the cabbage under the water with a wooden spoon every 2 to 3 minutes.
Check the thickest stalk with a knife; if tender, drain the cabbage immediately.
If not tender, boil for a few more minutes until just tender, then drain.
Serve
Serve hot with salt, pepper, and butter, or pour white sauce over it before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cabbage
- Is the main vegetable; cooking softens its tough stalk and leaves into a tender texture.
- Butter
- Adds richness and a smooth fat coating to the hot cabbage.
- White sauce
- Adds creaminess and moisture over the cooked cabbage, as an optional finish.
The step that matters
Checking the thickest stalk for tenderness. The thickest stalk takes longest to soften. Draining too early leaves it firm, while overboiling makes the leaves limp and waterlogged, so test with a knife before draining.
