Cocoanut-pudding with Sponge-cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the coconut

  1. Remove the shell and brown skin from the coconut and grate it finely.

  2. Save the milk of the coconut and strain it.

Make the pudding

  1. In an earthen dish, combine the grated coconut and stale sponge cake.

  2. Add the melted butter to the coconut milk and enough sweet milk to make 1 quart; pour it over the coconut and sponge cake.

  3. Beat the eggs thoroughly and mix them with the coconut and cake.

  4. Add the sugar and mix well.

  5. Pour the mixture into an earthen dish and bake for 30 minutes at 350°F (175°C).

  6. Serve with powdered sugar on top.

What each ingredient does

Eggs
Beaten eggs bind the mixture and set as the pudding bakes, giving it structure.
Stale sponge cake
Soaks up the liquid and gives the pudding a soft, absorbent body.
Coconut (in the method)
Adds coconut flavor and texture, and its milk moistens the pudding.
Sugar
Adds sweetness and helps the pudding brown lightly in the oven.
Butter
Adds richness and fat, contributing to a tender texture and flavor.
