Puff-faste

Ingredients

Directions

  1. Wet a thick pastry slab with a little water.

  2. Knead ½ pound of butter to remove salt and buttermilk, reserving 1 ounce of butter.

  3. Wrap the remaining butter in a floured napkin and place it on ice.

  4. Dry the slab thoroughly and sift ½ pound of flour onto it, forming a well in the center.

  5. Set aside 2 ounces of flour for dusting.

  6. In the well, add the reserved butter and the yolk of 1 egg, and cream them together with your fingertips.

  7. Gradually add the flour to the mixture.
