Cherry-tart

Ingredients

Directions

  1. In a bowl of very cold water, work the butter for five minutes until smooth and firm. Wrap in a floured cloth and refrigerate.

  2. In another bowl, mix flour and salt. Add the egg yolk and enough cold water to form a medium soft paste. Work quickly and roll out to the size of a dinner plate.

  3. Cut the butter into thick slices and lay them on the paste. Dust with flour and fold the paste to enclose the butter. Roll out two or three times quickly.

  4. Stem and stone the cherries. Line deep pie plates with pastry or use an under-crust. Do not press the edges.

  5. Heap the cherries in the dish and sprinkle with sugar. Lay a top crust lightly on the fruit, wetting the under crust edge to help it adhere.
