Ingredients

Directions

Make the base

  1. Make a puree of the chestnuts.

  2. In a thick saucepan, combine the chestnut puree, egg yolks, cream, powdered vanilla bean, salt, and pineapple syrup.

  3. Stir over low heat until the mixture thickens.

  4. Remove from heat and strain through a fine sieve.

  5. Cool the mixture and half freeze it.

Add the fruit and cream

  1. While freezing, chop the fruit and combine it in a bowl with the maraschino.

  2. Whip the cream until stiff peaks form.

  3. When the pudding is half frozen, mix in the whipped cream and fruit.

  4. Finish freezing the pudding.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Form the bulk of the pudding and give it a smooth, starchy body.
Egg yolks
Thicken the custard base as they heat and set it into a smooth texture.
Cream
Adds richness and fat, giving a softer, creamier frozen texture.
Whipped cream
Adds air and lightness, keeping the frozen pudding tender rather than dense.
Candied fruit
Adds chewy texture and concentrated sweetness against the smooth base.

The step that matters

Stir over low heat until the mixture thickens. Egg yolks set when heated, so high heat or long stirring can scramble them into lumps. Gentle heat and constant stirring thicken the custard smoothly.

Swap the raisin

How well each one fits the dish's main ingredients (chestnut, egg, cream, vanilla, pineapple, syrup):

  1. Strawberryfits better
  2. Figfits better
  3. Coconutfits better
  4. Raisinthe original

Fit is the average pairing score against chestnut, egg, cream, vanilla, pineapple, syrup. Candidates are from the same food group and used in at least 100 recipes.
