What each ingredient does

Milk
Forms the creamy base that freezes into the body of the ice cream.
Arrowroot or corn-starch
Thickens the milk when heated, giving the frozen cream a smoother texture.

The step that matters

Stir occasionally while freezing. As the mixture cools, ice crystals form and can grow large and grainy. Stirring keeps the mixture moving so crystals stay small and the texture stays smooth.
