Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they add a light, airy foam to the frozen mixture.
Powdered sugar
Sweetens the whipped egg whites and helps them hold their stable structure.
Rum
Adds aroma and flavor, and softens the ice so it stays scoopable.
Brandy
Adds aroma and warmth, and lowers the freezing point for a softer texture.

The step that matters

Folding in the egg white mixture. Fold gently so the whipped egg whites keep their air. Stirring hard knocks out the foam and leaves a dense, flat result.
