Why it works: Apple and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 16,478 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Crab-apple Jelly

Ingredients

Directions

Prepare the juice

  1. Wash and stem the crab-apples, then cut them in half.

  2. Place the apples in a pot and cover them with cold water.

  3. Stew the apples until they become a pulp.

  4. Pour the pulp into a jelly bag and let the juice drain.

Make the jelly

  1. For the jelly, combine 1 pint of juice with 1 pound of sugar in a pot.

  2. Boil the mixture for about 20 minutes, removing any scum.

  3. Check if the jelly sets by cooling a small amount on a plate.

  4. Once ready, let the jelly cool partially before transferring it to jars.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab-apples
Provide the fruit juice that, with sugar, forms the jelly's flavour and body.
Sugar
Sweetens the jelly and helps it set by binding with the fruit's pectin and water.

The step that matters

Checking the set on a cold plate. Jelly sets as the concentration of sugar and pectin rises during boiling, and the cold-plate test shows whether it has reached that point. Stopping too early leaves runny jelly, while boiling too long can make it stiff or cloudy.

Swap the apple

How well each one fits the dish's main ingredients (crab, sugar):

  1. Raisinfits better
  2. Lemonfits better
  3. Vanillafits better
  4. Applethe original

Fit is the average pairing score against crab, sugar. Candidates are from the same food group and used in at least 100 recipes.
