What each ingredient does

Milk
Milk curdles the citrus solids, and straining through a jelly bag leaves the punch clear.
White sugar
Sweetens the punch and balances the acidity of the citrus juice.
Oranges
Provide juice and aromatic oil from the rind for flavour.
Lemons
Provide acidity and juice, along with aromatic oil from the rind.
Brandy (in the method)
Carries the aromatic oils from the steeped rind and adds alcohol flavour.

The step that matters

Adding the boiling hot milk. Hot milk is poured into the acidic citrus mixture so its proteins curdle and bind impurities, which the jelly bag then strains out to clarify the punch.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, milk):

  1. Vanillafits better
  2. Orangethe original
  3. Figfits less well
  4. Blueberryfits less well

Fit is the average pairing score against lemon, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
