Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Singed, drawn, washed, and trussed the chicken.

  2. Place the chicken in a saucepan with chopped carrot, celery, and onion.

  3. Cover with salted water and put the lid on.

  4. Simmer in a 400°F (200°C) oven for about three hours until tender.

  5. Remove the chicken and make Allemande sauce from the remaining stock.

  6. Simmer small balls of carrot in the consomme until tender.

  7. Open and wash the cans of lima beans and flageolets, then mix with the carrot balls.

  8. Season the mixture with salt, sugar, and red pepper.

  9. Serve the chicken in joints with sauce poured over and garnish with the mixed vegetables.
