Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigs' fat
Adds richness and moisture, keeping the sausage tender and juicy as it cooks.
Pig's livers
Contribute deep, savory flavor and a smooth, rich body to the filling.
Minced lean pork
Provides the meaty bulk and structure of the sausage.
Eggs
Bind the filling so it holds together when sliced.
Anchovies
Add a salty, savory depth that enhances the meat flavor.

The step that matters

Stuff the mixture into beef casings. Filling casings too tightly can cause them to split during boiling, while loose filling leaves air pockets. Even packing keeps the sausage intact and evenly textured.
