Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw fat pork
Adds fat and moisture, keeping the sausage juicy after cooking.
Raw lean pork
Provides the main meaty body and structure of the sausage.
Raw veal
Contributes a mild, tender texture to the meat mixture.
Pickled pork
Adds savory, salty flavor and a cured character to the filling.
Anchovies
Adds deep savory flavor that enriches the overall taste.
Pickled tongues
Adds rich texture and a distinct cured flavor in the slices.

The step that matters

Stuffing and tying the casings. Packing the mixture too loosely leaves air pockets, while overfilling can split the casing during boiling. Even filling keeps the sausage uniform and firm when cooked and chilled.

Swap the white pepper

How well each one fits the dish's main ingredients (pork, veal, pistachio, nuts, wine):
