What each ingredient does

Pineapples
Provide the main flavor and the grated pulp that forms the body of the pudding.
Cornstarch
Thickens the grated pineapple as it heats, setting the pudding so it holds its shape when turned out.
Granulated sugar
Adds sweetness and balances the acidity of the pineapple.
Butter or coconut cream
Adds fat for a richer, smoother texture and mouthfeel.

The step that matters

Stir constantly over the double boiler until thick. Cornstarch only thickens fully when the mixture reaches a boil, and stirring keeps it smooth and prevents lumps or scorching. Stopping early leaves the pudding too loose to hold its shape in the mold.
