What each ingredient does

Beef
The main meat that is cured and becomes firm and seasoned as it salts.
Coarse sea salt
Draws moisture out of the meat and seasons it, preserving it during curing.
Saltpetre
Helps the meat keep a red color during curing; optional.
Moist sugar
Balances the salt's sharpness and supports the red color; optional.

The step that matters

Rubbing the meat thoroughly with salt. Salt must reach every part of the meat evenly. Uneven coverage lets some areas stay underseasoned or spoil while others become overly salty, so the cure works best when the whole surface is coated and turned daily in brine.
