Why it works: Clove and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 17,451 recipes. Both carry ethyl octanoate, which smells fruity, wine. The science ↓
Fish Sauce Without Butter
Ingredients
Directions
Simmer vinegar and water with onion, horseradish, cloves, mace, and black pepper until the onion is tender.
Remove the onion, chop it small, and add it back with the anchovies and ketchup; boil for a few minutes.
Beat the egg yolks and strain them; mix with the sauce gradually.
Place the saucepan over low heat and toss the sauce back and forth without boiling until it thickens to the consistency of melted butter.
