Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and sugar together until smooth.

  2. Add the beaten egg yolks and mix well.

  3. Stir in the milk.

  4. Sift the flour and baking powder together, then gradually add to the wet mixture until smooth.

  5. Beat the batter until it blisters.

  6. Fold in the beaten egg whites gently.

Bake

  1. Divide the batter into 2 pans and bake at 350°F (175°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and tenderness while creaming with sugar traps air for a lighter crumb.
Eggs
Yolks add richness and emulsify the batter; whites, folded in, add lift and structure.
All-purpose flour
Provides the main structure that sets as the bread bakes.
Baking powder
Releases gas in the batter to make the bread rise.
Sugar
Sweetens the bread and helps tenderize the crumb.

The step that matters

Folding in the beaten egg whites. Whites hold air that gives the bread its lift. Folding gently, rather than stirring, keeps that air from collapsing and leaves the crumb light instead of dense.
