What each ingredient does

Knuckle of veal
Long stewing breaks down connective tissue, giving the broth body and flavor and making the meat tender.
Lettuce hearts
Added late so they soften while keeping a fresh, tender texture and mild sweetness.
Asparagus
Added late so it cooks through while staying tender-crisp and bright in color.
Melted butter
Adds richness and fat, rounding out the lean broth and vegetables.

The step that matters

Skimming the scum. Scum that forms at the start and end of cooking contains impurities and proteins that can cloud the broth and taint its flavor if left in. Removing it keeps the soup clear and clean-tasting.

Swap the onion

How well each one fits the dish's main ingredients (veal, carrot, turnip, lettuce, celery, endive, cucumber):

  1. Beetrootfits better
  2. Leekfits better
