Meat Puddings and Pies

Ingredients

Directions

  1. Make a good suet crust or use equal parts butter and lard.

  2. Butter your basin well if boiling and line it with pastry, reserving some for the cover.

  3. For baking, your dish does not require lining.

  4. Layer the meat pieces in the basin, seasoning each layer with a mix of pepper and salt.

  5. For boiling, cover with pastry, pinch the edges, and tie a cloth tightly over the top.

  6. Boil for 2 to 2¼ hours.

  7. For baking, place a thin layer of pastry around the edge of the dish, extending halfway in.

  8. Add the meat, seasoning, and slices of hard-boiled eggs, then cover with pastry and make a small hole in the top.

  9. Crimp the edge of the crust with the back of a knife.
