Teal and Ham Pies

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Layer the veal pieces in a dish with slices of ham, bacon, or pork.

  2. Sprinkle chopped parsley, pepper, and coarse sea salt over the layers.

  3. Add a few slices of hard-boiled eggs.

  4. Bake in a moderate oven at 350°F (175°C) for 1 to 1¼ hours.

  5. Make a hole in the top and pour in stock gravy just before serving.

  6. For extra flavor, add small balls of veal stuffing.
