Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sauce
Forms the thick, rich body of the sauce.
Vinegar
Adds acidity that sharpens and balances the rich flavours.
Sherry
Adds depth and a sweet, aromatic note to the sauce.
Mushroom ketchup
Contributes savoury, umami depth to the sauce.
Butter
Carries the aromatics and helps the vegetables brown for flavour.

The step that matters

Reduce the mixture by half. Reducing concentrates flavour and thickens the liquid. Cooking too briefly leaves the sauce thin and weak, while over-reducing can make it salty or overly intense once the brown sauce and stock are added.

Swap the mace

How well each one fits the dish's main ingredients (ham, carrot, celery, onion, thyme, butter, vinegar):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against ham, carrot, celery, onion, thyme, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
