Why it works: Parsley and arrowroot match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 137 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

White Sauce for Chickens

Ingredients

Directions

Make the stock

  1. In a stew‑pan, combine the white stock, parsley, herbs, bay leaf, and salt.

  2. Boil until the stock tastes of the herbs, then strain and reduce by half.

Thicken and finish

  1. Mix the arrowroot with the cream and simmer gently for 5 minutes over low heat.

  2. Add the prepared stock to the cream mixture and simmer for 10 minutes if thick; if too thin, stir over medium heat until thickened.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White stock
Forms the savory liquid base that the sauce is built on.
Cream
Adds richness and body, giving the sauce a smooth, velvety texture.
Arrowroot
Thickens the sauce as it heats, giving a glossy, clear set.

The step that matters

Thickening the cream mixture with arrowroot. Arrowroot thickens when heated but can break down or turn thin if overheated or boiled too long, so it should be simmered gently and only until the sauce coats a spoon.

Fit is the average pairing score against arrowroot, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
