Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and 34,122 recipes mention both. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal and Sago Soup

Ingredients

Directions

Make the broth

  1. Combine veal and water in a large pot.

  2. Boil slowly with the lid loosely on for 4 hours until the meat is tender.

  3. Strain the broth through a coarse strainer and return it to the pot.

  4. Season with pepper and salt.

Add the sago

  1. Wash the sago.

  2. Soak the sago in lukewarm water for 1 hour.

  3. Stir the sago into the broth.

  4. Let the soup simmer for 30 minutes, stirring often.

  5. If the sago thickens too much, add boiling water to reach desired consistency.

Finish and serve

  1. Heat the milk until scalding hot.

  2. Beat the egg yolks lightly and gradually pour in 1 cup of the hot milk, stirring carefully.

  3. Add the egg mixture and the remaining milk to the soup.

  4. Taste and adjust seasoning if needed.

  5. Stir in chopped parsley if desired.

  6. Let the soup almost boil.

  7. Serve in a tureen.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Breaks down during long simmering to give the broth body and savory flavor.
Sago
Swells as it cooks, thickening the broth to a light, starchy body.
Egg yolks
Enrich and thicken the soup when gently tempered with hot milk, adding richness.
Milk
Adds creaminess and softness, mellowing the broth's savory taste.

The step that matters

Adding the egg mixture. Egg yolks scramble if they meet hot liquid directly. Tempering them with hot milk first, then adding them gently while the soup is not boiling, keeps the soup smooth and silky.

Flavor stand-ins for the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (veal, egg, milk, pepper):

  1. Nutmegabout as good a flavor fit
  2. Parsleythe original

Fit is the average pairing score against veal, egg, milk, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
