What each ingredient does

Cauliflower
Forms the main body of the dish and carries the sauce.
Milk
Provides the liquid base and creamy richness of the sauce.
Corn starch
Thickens the milk into a smooth sauce as it heats.
Butter
Adds fat for a rich flavor and smooth, glossy texture.

The step that matters

Adding the corn starch slurry to the milk. Corn starch must be mixed with cold water first so it disperses without clumping. Once it reaches the hot milk it thickens quickly, so stirring while it cooks keeps the sauce smooth.
