Roast Mutton

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash the meat well and wipe it with a clean cloth.

  2. Place the meat in a roasting pan and pour boiling water over it.

Roast

  1. Roast the meat, basting often with saltwater and then with its own gravy.

  2. Allow 12 minutes of roasting time per pound of meat at 350°F (175°C).

  3. If the meat browns too quickly, cover it with a sheet of paper.

  4. Once cooked, transfer the meat to a hot dish.

Make the gravy and serve

  1. Thicken the gravy with browned flour after removing excess fat.

  2. Season the gravy with pepper and salt, boil, skim, and serve.

  3. Serve with currant jelly.

What each ingredient does

Mutton
Provides the main meat, which turns tender and juicy as it roasts slowly.
Browned flour
Thickens the pan juices into a smooth gravy as it hydrates and cooks.
Currant jelly
Adds sweetness and acidity that balance the rich, fatty meat and gravy.

The step that matters

Covering the meat if it browns too quickly. Surface sugars and proteins brown fast at high heat, so the exterior can darken or scorch before the interior cooks through. A loose covering of paper slows browning while heat keeps reaching the center.

Swap the currant

How well each one fits the dish's main ingredients (mutton, pepper, flour):
