Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 350°F (175°C).

Layer and season

  1. In a deep bake-dish, layer cold mutton strips.

  2. Overlay with slices of parboiled potatoes, minced onion, chopped oysters, and bits of butter.

  3. Season with coarse sea salt and black pepper.

  4. Repeat layers until all meat is used, finishing with a layer of potatoes on top.

Bake and serve

  1. Pour 1 cup of gravy over the top layer.

  2. Cover the dish tightly and bake for 1 hour.

  3. Check for doneness by lifting the lid; contents should be cooked through.

  4. Serve in a deep dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold mutton
Forms the main body of the dish and becomes tender during slow covered baking.
Parboiled potatoes
Form the layered top and absorb gravy, adding body and soft texture.
Oysters
Add a savoury, briny flavour that is distributed through the layers.
Gravy
Provides moisture so the layers steam and stay juicy during covered baking.
Butter
Adds richness and fat that carries flavour and helps the top brown.

The step that matters

Cover the dish tightly and bake. A tight cover traps steam so the meat and potatoes cook through in moist heat without drying out. Lifting the lid early lets heat and moisture escape, which slows cooking.

Swap the onion

How well each one fits the dish's main ingredients (mutton, potato, oyster, butter, pepper):

  1. Asparagusfits about as well
  2. Onionthe original
  3. Capsicumfits about as well
  4. Tomatofits about as well

Fit is the average pairing score against mutton, potato, oyster, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
