Clam Soup

Ingredients

Directions

  1. Strain the liquor from the clams and place it in a large pot with ½ cup water, black peppercorns, red pepper pods, mace, celery, and salt.

  2. Boil for 10 minutes, then strain and return the liquid to the pot with the clams.

  3. Cover and boil rapidly for 30 minutes.

  4. In another pot, heat the milk, then stir in the rice flour mixed with cold water and the butter.

  5. Pour this mixture into the pot with the clams, remove from heat, and pour into a tureen with split Boston crackers at the bottom.

  6. Cover and let sit for 5 minutes before serving.
