Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal
Releases gelatin and flavour into the stock, giving body to the soup.
Lean beef
Adds meaty flavour to the stock as it browns and simmers.
Lean ham
Contributes savoury, salty depth to the stock.
Macaroni
Adds starchy body and bulk to the finished soup.

The step that matters

Warm very slowly. Gentle heat at the start draws out juices and flavour from the meat and bones gradually. Rushing this step can seize the proteins and leave the stock less clear and less rich.

Swap the clove

How well each one fits the dish's main ingredients (veal, beef, ham, onion, carrot, turnip, butter):

  1. Parsleyfits better
  2. Celeryfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against veal, beef, ham, onion, carrot, turnip, butter. Candidates are from the same food group and used in at least 100 recipes.
