What each ingredient does

Cabbage
Forms the bulk of the dish; boiling softens its fibres until it is tender enough to chop.
Butter
Adds fat and richness, coating the chopped cabbage and giving it a smooth, savoury flavour.

The step that matters

Discarding the first boiling water. Cabbage releases sulfur compounds and bitter flavours during the first boil. Replacing the water after 10 minutes removes much of these, so the final dish tastes milder and smells less strong.

Swap the cabbage

How well each one fits the dish's main ingredients (pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Cabbagethe original

Fit is the average pairing score against pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
