Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Line the pate-pans with a good paste and bake in a brisk oven at 400°F (200°C).

  2. In a saucepan, combine the bones and stuffing with 2 cups of cold water and simmer until reduced to 1 cup of gravy.

  3. Season the gravy well, then strain out the bones and stir in 3 tablespoons of milk, 1 tablespoon of butter, and a little parsley.

  4. Add the minced chicken to the gravy and warm until hot, but do not let it boil.

  5. Fill the paste shells with the mixture, arrange on a hot dish, and keep in an open oven until ready to serve.
