Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ducks
Provide the main meat, whose fat bastes and flavours the bird as it roasts.
Bread crumbs
Absorb juices and fat in the stuffing, keeping it moist and giving it body.
Hard-boiled egg yolk
Binds the stuffing and adds richness and a smooth, crumbly texture.
Melted butter
Carries seasoning over the skin and promotes browning and a rich flavour.
Flour
Browns in the rendered fat and thickens the gravy.

The step that matters

Dredging with flour and basting with butter at the end. Flour browns quickly in hot fat, so added too early or left too long it can scorch and turn bitter. Adding it in the last few minutes lets the skin brown evenly while the flour toasts.

Swap the onion

How well each one fits the dish's main ingredients (bread, egg, sage, butter, pepper, flour):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against bread, egg, sage, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
