What each ingredient does

German sago
Thickens the broth as its starch swells and dissolves during slow cooking.
Knuckle of veal
Releases collagen and flavor into the water, giving the broth body and savoriness.

The step that matters

Skim the surface well before adding the sago. Skimming removes foam and fat that would otherwise cloud the broth and taste greasy, leaving a clearer, cleaner soup.

Swap the celery

How well each one fits the dish's main ingredients (veal, onion, pork, pepper):

  1. Garlicfits better
  2. Thymefits better
  3. Sagefits better
  4. Celerythe original

Fit is the average pairing score against veal, onion, pork, pepper. Candidates are from the same food group and used in at least 100 recipes.
