Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mutton

  1. Sew the breast of mutton in a sturdy cloth and boil for 8 minutes per pound.

  2. Remove from water, wipe clean, and place in a dripping pan.

  3. Score the skin with a sharp knife, rub with salt and pepper, and wash with beaten egg.

Bake

  1. Sprinkle thickly with bread crumbs and bake in a 400°F (200°C) oven for 30 minutes, basting twice with melted butter.

  2. Check doneness with a skewer; if not done, return to the oven.

Make the gravy and serve

  1. Combine the broth with butter and flour in a saucepan, and bring to a boil.

  2. Stir in parsley, onion, pickled cucumber, and pounded egg yolks, and simmer for 3 minutes.

  3. Pour some gravy over the mutton and serve the rest in a gravy boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton breast
Forms the main body of the dish, becoming tender through boiling and then roasting.
Bread crumbs
Form a crisp, browned crust over the outside of the meat.
Butter
Adds richness and moisture, and helps the crumb crust brown while basting.
Egg yolks
Add richness and body to the gravy sauce as it thickens.
Flour
Thickens the broth into a smooth gravy.

The step that matters

Checking doneness with a skewer. The boiled and roasted meat must be cooked through; a skewer shows whether the centre is tender and hot. If it is not done, returning it to the oven finishes cooking without drying the crust, which is more reliable than relying on the 30-minute bake time alone.

Swap the onion

How well each one fits the dish's main ingredients (mutton, pepper, egg, bread, butter, flour, parsley):

  1. Shallotfits better
  2. Leekfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against mutton, pepper, egg, bread, butter, flour, parsley. Candidates are from the same food group and used in at least 100 recipes.
