Belle's Dumplings

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the flour, lard, butter, and enough milk to form a soft dough.

  3. Roll out the dough to a thickness of ¼ inch and cut into oblong pieces with rounded corners.

  4. Place a spoonful of tart preserves in the center of each piece and roll into a dumpling.

Bake and glaze

  1. Bake for about 40 minutes.

  2. Brush the dumplings with beaten egg while hot and return to the oven for 3 minutes to glaze.

Serve

  1. Serve hot with brandy sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prepared flour
Forms the dough structure that holds the filling and bakes into a tender case.
Lard and butter
Adds fat that keeps the dough tender and flaky as it bakes.
Milk
Hydrates the flour so the mixture comes together into a soft dough.
Tart preserves
Supplies a sweet-tart fruit filling that softens and flavors the dumpling interior.
Beaten egg (in the method)
Coats the hot dumplings to promote browning and a glossy finish.

The step that matters

Brushing with beaten egg while hot. Egg proteins set and brown in the oven's heat, so the glaze gives color and sheen. Applying it to cooled dumplings would leave the coating dull and less adhered.

Swap the cherry

How well each one fits the dish's main ingredients (flour, butter, milk):

  1. Vanillafits better
  2. Raisinfits better
  3. Coconutfits better
  4. Cherrythe original

Fit is the average pairing score against flour, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
