Scalloped Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Drain most of the liquid from the canned tomatoes.

  2. Cover the bottom of a pie dish with bread crumbs.

  3. Layer in the tomatoes and season with butter, pepper, coarse sea salt, and sugar.

  4. Cover thickly with fine, dry crumbs.

  5. Dot with butter and sprinkle with pepper and salt.

  6. Bake covered at 350°F (175°C) for 30 minutes, then uncover and brown quickly.
