Jersey Puffs

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Sift the flour with the salt into a bowl.

  3. Melt the butter in the hot milk.

  4. Whisk the eggs very well in a separate bowl.

Make the batter

  1. Let the milk and butter cool to just above boiling heat.

  2. Beat the egg yolks into the cooled milk mixture, then add the flour.

  3. Allow the batter to cool completely.

  4. Whip the egg whites until frothy and fold them into the batter.

Bake and serve

  1. Grease muffin rings and pour the batter into them.

  2. Bake in the preheated oven until golden.

  3. Serve immediately, tearing open with your fingers and enjoy with a liquid sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the puffs together as they set.
Eggs
Whipped whites trap air that lifts the batter, while yolks add richness and structure.
Milk
Supplies moisture that turns to steam in the oven, helping the puffs rise.
Butter
Adds fat that enriches the batter and contributes to a tender crumb.

The step that matters

Let the batter cool completely before folding in the whites. Hot batter can begin to cook the eggs and deflate the whipped whites, so the puffs rise less well in the oven.
