What each ingredient does

Lean beef
Supplies the meat that cooks through and gives the soup its savory, beefy flavor.
Carrot
Adds natural sweetness and body to the broth as it softens.
Onion
Contributes savory aromatic flavor as it cooks down into the broth.
Turnip
Adds mild sweetness and earthy flavor to the broth.
Tomato ketchup
Adds sweetness, acidity and color, helping the broth turn brown as it simmers.

The step that matters

Simmer gently for 30 minutes. Vigorous boiling toughens meat proteins and makes the broth cloudy. A gentle simmer lets the beef cook through evenly and keeps the soup clear.
