Why it works: Butter and bread are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Stuffed Tomatoes
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Cut a piece from the top of each tomato and scoop out the seeds and pulp.
Chop the removed seeds and pulp finely and season with butter, pepper, coarse sea salt, and sugar.
Add one-third as much bread crumbs and mix well.
Fill the tomato skins with the mixture and replace the tops.
Place the stuffed tomatoes close together in a baking dish and add any remaining stuffing between them.
Bake covered for 30 minutes in a 350°F (175°C) oven, then uncover and bake for an additional 10 minutes until browned and soft.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
