Why it works: Beef and onion are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,092 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Braised Beef
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Braise
Place the beef fillet in a broad pot.
Scatter sliced onion over the beef and season lightly with coarse sea salt.
If using, add the good gravy to the boiling water and pour it over the meat.
Cover tightly.
Cook slowly for 1.5 hours.
Add boiling water if the gravy gets too low.
Brown and baste
Dredge the cooked beef with flour.
Place it in a hot oven at 400°F (200°C).
Baste with butter as the flour browns, for no more than 10 minutes.
Make the gravy and serve
Strain the gravy.
Pour off the top fat.
Combine the fat with a little browned flour and ketchup.
Boil until thickened.
Pour a few spoonfuls of gravy over the meat.
Serve the rest in a gravy boat.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef fillet
- Long, slow braising turns the tough connective tissue tender while the meat stays moist.
- Flour
- Dredging creates a coating that browns in the oven and thickens the gravy.
- Butter
- Basting adds fat that carries heat to the surface and promotes browning.
- Ketchup
- Adds tomato acidity and sweetness that deepen the color and flavor of the gravy.
- Onion
- Releases sugars and aromatic compounds into the braising liquid, adding savory depth.
The step that matters
Basting the flour in the hot oven. Flour browns quickly at high heat, so basting for no more than 10 minutes prevents scorching while still building color and flavor on the surface.
