What each ingredient does

Bass
Is the main protein that is cooked gently in the seasoned liquid until flaky.
Drawn butter
Adds richness and a smooth, moist mouthfeel to the finished fish.
Vinegar
Adds acidity that brightens the flavour of the poaching liquid.
Lemon juice
Adds acidity that brightens the butter sauce and balances its richness.

The step that matters

Heating the pot slowly. Bringing the water up gradually over the first 30 minutes helps the fish cook evenly and stay moist. Rushing to a hard boil can toughen the outside before the centre is done.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, onion, butter, lemon):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against vinegar, onion, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
