Scallop and Baked Eggs

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cover the bottom of a pudding dish with fine bread crumbs.

  3. Add the minced chicken and wet it with gravy, seasoning to taste.

  4. Sprinkle a generous layer of crumbs on top and dot with butter pieces.

  5. Cover the dish and place it in the oven.

  6. When the gravy bubbles to the surface, remove the lid.

Bake and serve

  1. Crack enough eggs on top to cover the chicken well.

  2. Season with pepper and salt, and place a piece of butter on each egg.

  3. Bake until the eggs are set.

What each ingredient does

Chicken
Forms the savoury base and bulk of the dish, holding moisture as it cooks.
Fine bread crumbs
Absorb gravy and butter, giving the base a soft, lightly set texture.
Gravy
Adds moisture and savoury flavour, keeping the chicken from drying out in the oven.
Eggs
Set with heat to form a tender, cohesive topping over the chicken.
Butter
Adds richness and helps the top brown and taste rounded as it melts.

The step that matters

Removing the lid once the gravy bubbles. Covering traps steam so the chicken cooks gently and stays moist. Uncovering at the bubbling point lets the surface dry and the eggs set rather than steam into a watery layer.
