Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Thickens the soup as it cooks and adds body.
Onions
Fried brown, they add deep savoury flavour and colour to the broth.
Bones of the head
Release gelatine and flavour into the water during long stewing, enriching the broth.
Meat from the cheeks of an ox-head
Becomes tender through slow stewing and gives the soup its main body.

The step that matters

Skimming the fat after cooling. Fat rises and sets on top of a cooled broth, so removing it before reheating keeps the soup clean-tasting and less greasy.
