Baked Berry Dumplings

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the flour with the lard and butter.

  3. Add enough milk to make a soft dough.

  4. Roll out the dough to ¼ inch thick and cut into oblong pieces with rounded corners.

Fill and shape

  1. Place blackberries or huckleberries in the center of each piece and sprinkle with sugar.

  2. Bring the edges together and pinch to seal.

Bake and serve

  1. Place the dumplings in the oven with the sealed edges facing down.

  2. Bake for 40 minutes.

  3. Glaze with butter just before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prepared flour
Forms the dough structure that encloses the berry filling while baking.
Lard and butter
Adds fat for a tender, flaky texture and rich flavor in the crust.
Milk
Hydrates the flour so it forms a soft, workable dough.
Blackberries or huckleberries
Provide the main fruit flavor and juicy filling inside each dumpling.
Sugar
Sweetens the berry filling and helps the fruit taste richer after baking.

The step that matters

Pinching the edges to seal. A tight seal keeps the juicy berry filling inside while baking. Gaps let juice escape and can leave the dumplings dry and the filling thin.
