Roasted Sweetbreads

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil and blanch the sweetbreads, then wipe them dry.

  2. Roll the sweetbreads in beaten egg and coat them with cracker dust.

  3. Place the sweetbreads in a baking pan.

  4. Pour melted butter over the sweetbreads to soak into the crumbs.

Bake and baste

  1. Bake the sweetbreads in a covered dish at 400°F (200°C) for 45 minutes.

  2. Baste the sweetbreads with gravy once they start to brown.

Make the gravy and serve

  1. Strain the gravy.

  2. Add mushroom catsup and wine to the strained gravy.

  3. Boil the gravy mixture.

  4. Pour the gravy over the sweetbreads.

  5. Serve the sweetbreads on crustless slices of fried bread.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; boiling and blanching firm them before coating and baking.
Cracker dust
Forms a crisp, browned coating that holds the sweetbreads together.
Beaten egg
Binds the cracker dust to the sweetbreads so the coating adheres during baking.
Melted butter
Adds fat and richness, carrying flavour into the crumb coating and helping it brown.
Gravy
Provides moisture and savoury flavour when basting and pouring over the sweetbreads.

The step that matters

Bake in a covered dish, then baste once browning starts. Covering the dish traps steam so the sweetbreads cook through gently, while basting only after browning begins keeps the crumb coating from softening and burning.

Swap the onion

How well each one fits the dish's main ingredients (egg, mushroom, wine, butter, bread):

  1. Shallotfits better
  2. Asparagusfits better
  3. Tomatofits better
  4. Onionthe original
