Eggs and Mushrooms

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mushrooms

  1. Slice the canned mushrooms in half.

  2. Stew the mushrooms in a little butter with pepper, salt, and a small amount of water for 10 minutes.

  3. Drain the mushrooms and place them in a pie dish.

Bake and serve

  1. Break enough eggs to cover the mushrooms.

  2. Season with pepper and salt, and scatter bits of butter on top.

  3. Sprinkle with bread crumbs and bake at 350°F (175°C) until the eggs are set.

  4. Serve in the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a custard-like layer that holds the dish together when baked.
Mushrooms
Provide the main body, moisture and savoury flavour under the eggs.
Butter
Adds richness and flavour to the mushrooms and browns the top.
Bread crumbs
Form a crisp, golden crust on top during baking.

The step that matters

Bake until the eggs are set. Egg proteins coagulate with heat, so the whites and yolks firm up at a set point. Removing the dish too early leaves them runny, while overbaking makes them rubbery and dry.
