Prepare the stock

  1. Remove the fat from the top of your cold stock.

  2. Add boiling water and sliced onion to the fat, then cool slowly with the meat for 40 minutes.

  3. Strain the mixture, pressing all the strength out of the meat.

  2. Add the diced sweetbread to the soup and boil for 1 minute.

  3. Stir in a handful of fried bread and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Browned flour
Thickens the soup as it heats, giving it body.
Sweetbread
Adds a tender, rich meat texture to the soup.
Fried bread
Adds crisp-edged, absorbent bread pieces that soften in the broth.
Sliced onion
Contributes savory aroma and flavor to the stock.

The step that matters

Thickening with browned flour. Flour must be mixed smoothly with cold water before it goes into the hot soup, because dry or lumpy flour clumps and does not thicken evenly. Starch thickens properly only once the liquid is hot and stirred well.

Swap the onion

How well each one fits the dish's main ingredients (flour, bread):

  1. Arrowrootfits better
  2. Shallotfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against flour, bread. Candidates are from the same food group and used in at least 100 recipes.
