Cream Cakes

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Roll out the puff-paste as for pies.

  2. Cut into squares five inches across.

  3. Grease muffin rings that are three inches in diameter.

  4. Place one ring in the center of each square.

  5. Fold up the four corners to form a cup shape and pinch the tips to secure.

Bake and finish

  1. Bake in a 400°F (200°C) oven until done.

  2. Carefully remove the rings and brush the pastry inside and out with egg white.

  3. Return to the oven to brown.

  4. Once cooled, spread jelly inside and fill with sweetened whipped cream flavored to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Good puff-paste
Forms the crisp, flaky cup that holds the filling.
2 egg whites
Brushed over the pastry to help it brown and gives it a glossy finish.
½ cup sweet jelly
Adds sweetness and fruity flavor inside the cooled pastry.
1 cup cream, whipped
Adds light, airy moisture and richness to the filling.

The step that matters

Removing the rings before brushing and browning. The pastry must be set and cooled enough to hold its cup shape once the rings are removed. Brushing with egg white before the final bake helps it brown and seal, while filling only after cooling keeps the cream from melting and making the crisp shell soggy.
