Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the main body of the dish, becoming soft and tender as it cooks.
Vinegar
Adds a sharp acidity that brightens the mild, rich flavour of the cooked cabbage.

The step that matters

Press hard. Cooked cabbage holds a lot of water. Pressing out the excess before chopping and seasoning keeps the dish from tasting diluted and stops the seasoning from washing away.

Swap the cabbage

How well each one fits the dish's main ingredients (pepper, vinegar):

  1. Capsicumfits better
  2. Mustardfits about as well
  3. Cabbagethe original
  4. Cucumberfits less well

Fit is the average pairing score against pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
