Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat from roast chickens
Forms the main body and flavor of the croquettes.
Mashed potato
Adds bulk and helps bind the mixture together.
Eggs
Bind the mixture and help it set firm when heated.
Pounded cracker
Forms a crisp, browned coating when fried.

The step that matters

Heating the mixture until quite stiff. The mixture must be cooked long enough for the eggs and starch to set; if it stays soft it will not hold its shape when rolled and may break apart in the oil.

Swap the potato

How well each one fits the dish's main ingredients (meat, chicken, egg):

  1. Asparagusfits about as well
  2. Potatothe original
  3. Capsicumfits about as well
  4. Leekfits less well

Fit is the average pairing score against meat, chicken, egg. Candidates are from the same food group and used in at least 100 recipes.
