What each ingredient does

Milk
Forms the creamy body of the soup and adds richness and mild sweetness.
Corn starch
Thickens the liquid as it heats, giving the soup body.
Butter
Adds fat for richness and a smooth mouthfeel when stirred in gradually.
Onions
Break down while boiling to add savory flavor and body to the pulped base.
Turnips
Soften and pulp to give the base bulk and a mild earthy sweetness.

The step that matters

Gradually stir in the butter. Adding fat slowly, while the soup is hot and stirred, helps it emulsify into the liquid. Dumping it in at once can separate, leaving a greasy, oiled surface.

Swap the onion
