Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Fricasseed Eggs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggs

  1. Place hard-boiled eggs in cold water immediately after cooking.

  2. Cut the eggs crosswise and remove the yolks.

  3. Slice a bit from the bottom of each egg white to create a stable base.

  4. Arrange the egg whites closely together in a flat dish.

Make the filling

  1. Mash the yolks with melted butter, then mix in chopped meat, pepper, salt, and mustard.

  2. Form the mixture into round balls and fill the egg whites.

Sauce and bake

  1. Heat the gravy and stir in the cream, then pour it over the filled eggs.

  2. Bake in a 400°F (200°C) oven for 3 minutes.

  3. Garnish each ball with a bit of parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Mashed with butter to form a rich, creamy filling.
Gravy
Provides moisture and savory flavor for the sauce poured over the eggs.
Cream
Adds richness and body to the gravy sauce.
Melted butter
Adds fat that makes the yolk filling smooth and rich.
French mustard
Adds sharp, tangy flavor that balances the rich yolk filling.
Chopped meat
Adds savory substance and bulk to the yolk filling.

The step that matters

Baking time. Only 3 minutes in a 400°F oven is very brief, so the sauce and filling may stay cool in the center. Heating the gravy fully before pouring helps ensure the dish is hot when served.

Swap the mustard

How well each one fits the dish's main ingredients (egg, meat, butter, pepper, cream, parsley):

  1. Potatofits better
  2. Shallotfits better
  3. Spinachfits better
  4. Mustardthe original

Fit is the average pairing score against egg, meat, butter, pepper, cream, parsley. Candidates are from the same food group and used in at least 100 recipes.
